Back in high school on Kwaj, Mike spent his lunch breaks racing home to grab a quick bite. Every now and then he’d catch a call from family friends offering fresh‑caught tuna. He’d bike over, and they’d load his back baskets so full the front wheel lifted off the ground. After a running push to get him started, he’d wobble home — usually crashing somewhere near the house. Inside, he’d break down the tuna, clean up, and stash it in the fridge like treasure, waiting for Friday night. As soon as his parents headed out, his friends Carl, Kevin, Peter, and Bill would show up, and the poke‑making began.

Over the last 30 years, Mike has fine‑tuned his recipes, and one taste is all it takes to understand why his poke stands out. In Hawai‘i, “broke da mouth” is the highest compliment a chef can receive — and Mike still remembers the day a big Hawaiian uncle tasted his poke, shook his head, and said, “Wow… from a haole.” Not just any haole, but a local, island‑raised one.
Compliments like that — genuine, generous, and straight from the heart — gave Mike the confidence to launch a small poke pop‑up tent, which eventually grew into the poke trailer he runs today.
